Did you guys change it so that you can't edit your posts a long time after the fact? If so, why?

We changed it for most of the forum, although the progress log forum shouldn't have changed. I'll have a look to see what happened.

Beaver I should have just fixed the issue with the Progress log not letting you edit also. So now you should be able to edit the progress long indefinitely and all other forums for only an hour after the post.
