    I made some duck confit, which is currently in my fridge, seeping up all the delicious fatty goodness before the big day! I am also doing a seared tuna sashimi. I will be searing it with a rub on both sides of black pepper, lime, and garlic.

    I was going to do a marrow butter, but had no time to make it yesterday.

    For those interested, I used the following as a skeleton recipe for my duck confit, and innovated on it:

    Instead of duck thighs, which are commonly considered a better meat for stewing (hence, its common use in confit), I used duck breast because it is healthier and meatier. Also, the dry consistency of the lighter meat would allow it to soak in more juices. I added a light bit of white wine to the fat, and further spiced the fat to add extra flavours to the entire slow cooking process. You can even add veggies and stuff if you ever try it. Really, anything works.

    The tuna is sushi quality fish, which you really must get. If you don't, it is taking a risk. The last thing you want is tiny parasitic eggs in your sushi. Also, it is just a better cut and will taste way better. The other option is buying your own fridge that drops below 20 degrees celsius and make your own sushi quality fish.

    For dessert, I am thinking of buying a nice vanilla ice cream, letting it melt a bit, and mixing a touch of it in with a nice vanilla greek yogurt in a brandy glass, and then topping it with berries and whipped cream.

    My girlfriend and I really like food.

    Our plans for the evening are a bit more simple. She wants to spend the entire evening in doors, so we are watching a movie and gettin' busy a few times.

    Honestly, we could give two shits about Valentine's Day, but it falls right at the start of my reading week and provides an excellent excuse/opportunity to eat really really well.

    On one end, I am bragging. Seriously, I am super-proud of this meal. On another, I am excited! I love quality food. But beyond all that, I hope this inspires some of you to get interesting with your cooking. Why go out for a meal, when you can outshine any restaurant with an intimate meal made with time and love?

      I will never understand american way of weighing. How can a cup mean weight when its clearly volume.

      Buy some granola musli and strawberry syroup. Make layers of it with the icecram yogurt thing.



      This duck sounds tasty but fuck, how much fat it has?

        I should make note, I didn't follow any of the measurements they outlined. I did it as I saw fit myself. I am only doing two breasts, not four thighs. Also, instead of measuring out four cups, I bought two full containers (each container about 250 mL) of duck fat and just used all of it. Also, instead of removing the duck from the fat, and then pouring fat from there on the duck, I've let the duck sit submerged in the fat in my fridge. It just seemed to make way more sense. On friday, I will pour the fat into a pot, render the fat by bringing it to a light simmer with water, and then cook the duck on its own for 15 minutes. Then, I will place each breast in a plate and pour a touch of the rendered fat over the final product.

        I will be using this method to render my duck fat:

        The leftover fat will be stored for future cooking.

        I tried doing parfaits before with granola and muesli and she didn't take to it. Thanks for the suggestion though.
